This farm is owned for 80 years by the family Lopez, passed on to 4 brothers in 2005 who separated the farm in two. Main varietal is Castillo. Today also Geisha and Java. They also plant Avocado and Platano. Avocado is planted separately, Platano is mixed with the coffee trees.

Drying time: 23 days
Drying method: Dried on movable raised beds with partial sun exposure during daytime with good weather. During nighttime when temperature drops and relative humidity increases the drying beds are stored inside the production building. The key for black honey is to remove from little to non mucilage during the depulping process, also avoiding direct sun for the first days.
Hand sorting: The cherries get hand sorted at picking, later again during the drying process and a third time after milling process to remove defects, which can only be spotted at the green bean.
Lot size: Stabilization: Processed lots usually do not exceed 150kg of green coffee. At the farm after drying to 9-11% humidity the coffee gets packed in GrainPro bags and sisal and stored at the farm, at 20°C. Every 15 days the coffee gets cupped to check flavor process and cup quality. Usually after 1,5 months the coffee is stabilized and ready for export.
